Growth of almonds
Almonds grow on almond trees. They start as a flower and grow from there into a complete fruit. To get there, almond trees are in 'hibernation' from December to February. During this period, the trees are recovering and being prepared for the next harvest. During this period, the almond trees are already budding. From January, the weather gets warmer, so the buds start growing faster. The almond trees come into blossom in February. The period after that is very important. Frost should be completely absent, the temperature should be mild (12 to 15 degrees) and preferably it rains as little as possible. Under these conditions, the bees can best fertilise the almond trees. After fertilisation, the flower grows into a soft grey-green fruit that is fully mature by July. The skin of the almond fruit begins to harden and will eventually burst open. Between July and October, the fruit splits open further and further to allow the almond to dry. The nut eventually splits off completely from the fruit and shortly before harvest, the skin opens completely.

Use and storage
Almond flour is delicious in smoothies or baking products. For example, replace 20% of the flour (in cakes, pastries or bread) with almond flour. Almond flour has a naturally sweet flavour so you can also use less sugar. Make your own almond paste by adding about 20% sugar and a very small amount of water. Store dark, sealed and cool.
